Open one of these neo geo games and press f2. Now select 'setting up the soft dip' then on the next menu select whichever game you are playing (2nd option) and then scroll all the way down to the second page and there is the option to select your language. By the way, button 1 selects the option, button 3 goes back. I'm accustomed to seeing the same screen when booting Neo Geo MVS games in all the MAMEs that I've used: It's possible that MAMEUIFX does not recognise the AES bios. Like you said, to access the bios settings in MAMEUIFX go right click on any Neo Geo game in AvailableProperties for neodrvr.cMiscellaneousBIOS. I'm using MAMEUIFX 0.132 to. I just picked up a nice 1 slot Neo Geo cabinet that was set up as a dedicated Metal Slug with full-size marquee and the like and a very nice 25' monitor for $150 and got it set up at home. I have a pretty good (around 30 games) collection of AES carts for my home console, and am conversant in the system's library. However, I've never messed with a multi-cart.

lr-fbneo is the prefered Pi 3/Pi 2 Neo Geo emulator due to its accuracy.
lr-fbalpha2012 is useful for any games that may be running slow in the latest version of lr-fbneo for a Pi 3/Pi 2, and if used exclusively instead of lr-fbneo will allow you to do full system updates without worrying about needing to update your ROM Set, but comes at the cost of inaccuracy such as games having audio issues across the entire library and other issues that have been fixed in the latest version of lr-fbalpha.
PiFBA is recommended for those on a Pi 0 or Pi 1.

BIOS file with the exact same MAME or FB Neo version as the emulator you select. Place the correct neogeo.zip

The menus allow you to change various settings like region, dip switch settings for gameplay options like difficulty or blood, and coin or free play settings. Unibios settings will persist after quitting FBA, launching another Neo Geo game, or rebooting RetroPie.

As there is no menu to configure controllers with PiFBA, like there is with Mame4all, you'll have to edit the aforementioned file manually.

You can only play roms that have the same name as these .drv
files, e.g. mslug2.zip
(rom) and mslug2.drv
(data). If the names of these files don't match, GnGeo-Pi will crash. (see the list at the bottom of this page for compatible ROMs)

How to install it on PiFBA:
- Get it here (version 3.2): http://unibios.free.fr/download.html
- Extract the downloaded file, rename uni-bios.rom to asia-s3.rom.
- Open your own neogeo.zip, there should be a asia-s3.rom file inside, back it up if needed.
- Put the new renamed asia-s3.rom into neogeo.zip, replace it with the old one.
- Now upload the new neogeo.zip back to the Recalbox share folders, on both bios and finalburnalpha
How to install it on Fba_libretro :
Launch a game and enter in the retroarch menu ( Hotkey + B )

For Pifba
- Start up any neogeo game, you will see the new UNIVERSE BIOS v3.2 splash screen.
- During this startup screen, press and hold BXY for region/mode setup, or hold ABX for dip switch menu.
- To access the in-game menu, press and hold BXY+START at the same time.
For fba libretro
- Start up any neogeo game, you will see the new UNIVERSE BIOS splash screen.
- During this startup screen, press and hold CBA (XBA) for region/mode setup - Press C to exit
- To access the in-game menu, press and hold CBA (XBA) +START at the same time.
